I shared in my stories when I was testing this that baking is definitely more of a science than cooking so it’s where you need to be a little more precise but that doesn’t mean it has to be hard. A few simple ingredients and you’ve got something special in no time. ā£

A little pro tip, rather than one large baking pan, use two smaller sized ones so you can freeze one for another time. Because you know I’m always thinking about my future self and how to make her life easier when things get busy. This way you have something to pull out when you have friends coming or these are always a hit as a hostess gift. Because everyone loves the gift of food!
ā£I’m currently obsessed with @allofoils blood orange olive oil but you can use regular olive oil if that’s what you’ve got. It’ll be delicious either way. š

Citrus Olive Oil Cakeā£

1/2 cup blood orange olive oil or regular olive oil ā£
3/4 cup sugarā£
1 cup all purpose flourā£
1/2 cup semolina flour, substitute all purpose if you don’t have itā£
1 1/2 tsp baking powderā£
1/4 tsp baking sodaā£
1/2 tsp kosher saltā£
3 large eggs at room temperatureā£
1/2 cup buttermilkā£
2 tsp orange zest ā£
1 tsp vanilla extractā£

Preheat the oven to 350*ā£
ā£
Combine the flours, baking powder, baking soda and salt in a bowl. Set aside.⣠In an electric mixer, beat eggs with the sugar until well combined, about 2-3 minutes. Add yogurt, oil, zest and vanilla and beat for one minute. Add flour mixture and mix until just combined. Transfer batter to a prepared loaf or cake pan. ā£

Bake for 40-50 minutes or until a toothpick inserted in the centre comes out clean. Cool and serve with fresh orange slices and a sprinkle of icing sugar.
