Peanut Butter Chocolate Bliss Balls
Peanut Butter and Chocolate have always been a favourite combo of mine. When I was a kid, Reese's peanut butter cups were always the first thing I ate out of my halloween candy.
Nowadays, I'm always looking for quick, healthy snacks to have on hand that I can grab and go that also taste delicious. And let me tell you these taste so much better than your average energy bar!
Packed full good fats, high in protein and fibre these are the best for that quick in between pick me up between meals or a pre workout boost if you're like me and workout in the early morning but your body isn't quite ready for a full breakfast that early in the am ;)
Make sure you buy the best dark chocolate you can. When you go with the good stuff use less of it because the flavour is there, not the crap. Quality dark chocolate has a high cocoa content which means its full of antioxidants, magnesium and potassium.
Basically, these babies are full of all the superfoods that'll give you all you need to stay feeling full and energized and balance blood sugar avoiding the dreaded sugar crash.

Peanut Butter Chocolate Bliss Balls

2 tbsp natural peanut butter

1 cup roasted almonds

3/4 cup peanuts, roasted and unsalted

1/4 cup hemp hearts

2 tbsp chia seeds

20 dates, soaked in hot water for 10 min, discard liquid

2 tsp vanilla

1 tsp salt

1/2 cup dark chocolate, melted
Peanut Crunch Topping
Preheat the oven to 350*
To make the peanut topping, place the peanuts, hemp hearts and maple syrup on a baking sheet lined with parchment paper. Toss to combine. Bake for 10-15 minutes or until golden. Set aside to cool. Break up into crumbs and set aside.
Combine all the ingredients except the chocolate in a food processor and process for 2-3 minutes or until the mixture comes together.
Roll mixture into 2 inch balls. Melt the chocolate in the mircowave or in a double boiler.* Dip each ball into chocolate and place on a lined baking sheet. Sprinkle one half of each ball with the peanut topping. Refrigerate for 20 minutes until set.
These will keep for up to 2 weeks in the fridge.
*If you don't have the time or patience to roll these in the chocolate you can simply drizzle it over top and then sprinkle the topping. They won't look quite as pretty but they'll taste just as good!*
