It's that time of year again. Fall is just around the corner which means cozy socks and warm, comforting soups and stews. There's something about having great smelling food coming from the kitchen. It always makes me feel good. Now just because we're talking slow cooking doesn't mean it has to take alot of effort. Totally the opposite actually. Low and slow means you let the heat do the work and you can relax with your book under a blanket. And with the crockpot you don't even need to turn on the oven!
This African Peanut Stew is packed full of the good stuff and has all kinds of flavours going on so it's far from boring. It even works well for weeknight dinners because you can throw everything in the crockpot in the morning and it'll be ready for you after the work day.
African Peanut Stew
Brown meat in a large skillet, in batches if needed to not crowd the pan so that the meat gets good colour without steaming.
Add all ingredients except spinach and peanuts into a crockpot. Turn on low and cook for 6-8hrs or until meat is tender. Add the spinach at the last minute just until wilted. To serve top with chopped peanuts.
*You can substitute chicken, lamb or chickpeas for the beef if you prefer.*
