If you've never made fritters before, these are the ones to start with! So easy and taste amazing on their own, with eggs in the morning or alongside something hot off the grill.
Zucchini and Corn are overflowing at all the farmers markets right now and if you're lucky enough to grow some at home you're probably looking for some inspiration to use them up. I've added some corn flour (masa) for that extra 'corny' (yes I said it) flavour and dusted them with it to add some extra crunchy texture.
Combine the corn, zucchini, flours, cilantro, and chili flakes in a bowl. Mix until combined, Beat the egg and the milk together separately and add salt and pepper to taste. Add the egg mixture to the corn mixture and stir until just combine. Don't over mix.
Shape into 6-8 patties and dust with extra corn flour until just coated. Refrigerate for 10 minutes to allow the patties to firm up.
Heat ghee in a medium sized skillet on medium/high. Add the fritters to the pan and cook until browned on each side and cooked through, about 3 minutes per side.
*You can freeze these uncooked to have on-hand for a quick meal. Thaw in the fridge and then cook as per usual.*
